Blueberry and Almond Tart

After a long break from posting anything to do with baking or cooking, and I'm back with the Blueberry Tartelette recipe, I found the recipe from BBC GoodFood.



Blueberry Tartelette

Ingredients for Sweet Pastry Crust:
 
200 g all purpose flour
100 g butter, softened
100g sugar
2 egg yolks
Cold water (optional)
 
Crumb together butter and flour by hand. Add sugar. Mix in egg yolks and water (if needed). Knead the dough briefly, wrap in a cling film and chill about 20 minutes.
 
Lightly butter a non stick tart pan. Once the dough is sufficiently chill, evenly pat the chilled pastry into the bottom and up the side of the pan. Chilled again for about 15 minutes.
 
In a meantime, preheat oven at 180C.
 
 
Ingredients for the Blueberry and Almond Filling:
 
85 g butter, softened
170 g sugar
170 g ground almonds
2 eggs, beaten
250 g punnets blueberries
Icing sugar for dusting (optional)
 
Beat together butter and sugar until its light and fluffy. Stir in almonds and eggs.
 
Stir in half of the bluberries into a pastry dough and pour the almonds mixture. Scatter  over the remaining of the blueberries, pressing them lightly.
 
Bake them for 40 - 45 minutes or until the pastry and the filling is crisp and golden.
 
Cool the tart for 10 mins in the pan, then lift onto a serving plate. Dust with a little icing sugar and serve warm or at room temperature
