Tarte au Flan

When i asked dear husband what he wanted for a goûter this Sunday, without hesitation he told me he wanted Tarte au Flan or simply a vanilla custard  tart. I did it once, and it was many yonks ago. And I had to googled the recipe even though I had it in my old blog. We can agree that I'm too lazy to find it.

Tarte au Flan (Vanilla Custard Tart)

Ingredients:
1 roll of sweet puff pastry
1 litre milk
3 eggs + 1 yolk
100 g corn flour
100 g sugar
1 vanilla bean or few drops of vanilla extract

Roll out the pasty to a greased pie dish and let it rest in the fridge for at least 15 minutes.

Remove from fridge, prick the pastry with fork. Keep aside.

For the custard, pour the milk in a saucepan, slit the vanilla bean, scrape the seeds and add to the milk. Bring to boil then reduce to simmer.

Beat the eggs and yolk, sugar and corn flour until pale.

Gradually pour the hot milk into the egg mixture, stir well.

Return the custard mixture to the saucepan and bring to boil over a low heat while whisk constantly. As the custard thickens, pour the mixture into the pastry case. 

Bake the flan in the preheat oven (200 deg C) for about 35 minutes or until its slightly browned.

Remove from oven, let it cool down at least 2 hrs.
