Homemade Foie Gras

Christmas and New Year were long over but we're still in the mood, well, we still have boxes of chocolates waiting to be eaten.

When we were back in Savoie, we stop by to our friend's shop Abdel, he's a butcher in Annecy. We saw he sold a fresh foie gras and asked about it. After we bought it and Mom in Law paid for it (i love this part though..tee heheehe), I asked hb, who's going to prepare it..oh dear, I love when he said, we will prepare it..We mean I/me.. Get it?

Back here in Marly, after searching hi and lo for the simplest recipe for foie gras, I decided to give it a go.


 Recipe:
500 g fresh foie gras
Milk, enough to cover the foie
Salt and pepper to taste
Plastic wrap
Tea towel/dishcloth
Soak foie in the milk for at least 24 hrs in the fridge.
After 24 hrs, drain and wash the foie with warm water, leave it in room temp.
The foie consist of 2 lobes, large and small parts. Separate it.
Ok, this will be the trickiest part, try to remove all the veins with a small sharp knife. Once it finish, run it through a warm water and pat dry with kitchen towel.
Put the foie in a chopping board/large flat plate and season well. Do not over seasoning as this will masque the real taste of the foie.

Line a long plastic wrap and spread the foie in the middle
 
Wrap the foie gras with the plastic wrap, roll it tightly and twist the end of the plastic.

Wrap it up again this time with the tea towel. Secure the end with butcher twine.
 
 
Leave it in the fridge at least for 30 minutes.
 
 
 
In a sauce pan, bring water to boil, turn off the heat, make sure the foie gras really submerge in the boiling water. Leave it to cool down. Once it cool, take the saucepan with the foie gras and place it in the fridge for at least 24 hrs.
 
Take the foie gras out from the fridge and remove it out from the cold water and the tea towel too.
 
Your very own foie gras is ready!
 
Serve with warm crusty bread and sprinkle of sea salt..
