Svenska Kottbular (Swedish Meatball)

Raise your hand if you never had this meatball when you go to IKEA! And iconic meal from Sweden and actually I never heard of it until we had it IKEA cafeteria many moons ago.

I made mine simple and of course without the linggonberries. I wonder if we could even find it here in Geoje! Instead of boiled potatoes, we had it with pasta. Make it simple and  that's the way we like it.



Svenska Kottbular

Ingredients:
For meatballs
500 g beef mince
1 egg
1 onion, chopped finely
1/2 cup panko/fresh white breadcrumbs
1 tbsp parsley, chopped
Salt and pepper
Olive oil
In a bowl, mix all the ingredients except olive oil. Form into a small meatballs.
Heat olive oil in a large non-stick frying pan and brown the meatballs. Do it in few batches. Remove from pan and keep aside.
For Cream Sauce
2 tbsp butter
2 tbsp flour
1 chicken stock cube or 2 cup beef broth 
1 cup cream
Salt and pepper
Chopped parsley
Melt butter in the same frying pan, whisk in flour until lightly brown. Add the chicken stock cube or beef broth and cook. Whisk until thickened. Add the cream.
Add the meatballs in the pan and let it simmer for at least 10 minutes. Season the sauce.
Garnished the sauce with chopped parsley and serve with pasta or boiled potato like the Swedish!
