Lemon and Cranberry Loaf

When life gives you lemons, DON'T MAKE LEMONADE! (I love this darn quote)

Make something else! I did, and I made lemon loaf instead. And it's much better than those lemonade. Who want to drink lemonade when it's cold outside?? Not me definitely!

Calm down....breath in and out. Here's the recipe for this delicious, tangy and sweet loaf.


Lemon and Cranberry Loaf

Ingredients:
355 g all purpose flour
177.5 g sugar
79 g butter, softened
2 eggs
15 g lemon peel, grated
22 ml lemon juice
5 g baking powder
4 g salt
118 ml low fat milk
237 g dried cranberries

Glaze:
30 g confectionery sugar
20 ml lemon juice


Preheat oven 350*C.

In a mixing bowl, cream butter, sugar, lemon juice and peel.

Add egg, one at a time, beating well after each addition.

Combine flour, baking powder and salt in a separate bowl. Add to creamed mixture, alternately zith milk. Stir in cranberries.

Pour batter into a prepared loaf pan.

Bake for 45-50 mins or until pick inserted in center comes out clean. 

Cool loaf completely.

Combine sugar and lemon juice for the glaze, combine until sugar is dissolved completely.
Spoon glaze over loaf.

Cool completely before serving
