Quinoa Tabouleh

After days or years of bad eating habit, time to time I like to eat simple foods. And we tried to have at least few days of non meat meals and favour for foods like veges soup and lots of salad. Quite difficult for a meat eater/lover like me I have to admit, but hubby love this kind of dinner. He could eat soup any time and at any season too. For me, soup mean winter..though in Malaysia we do eat soup during meal but since moving out from the country, I tend to associate it with a wintry cold in France.

Last week, while blog hopping, I tumble across this recipe, Quinoa Tabouleh. Instead of using bulghur, we used quinoa here..Quinoa, maybe not many know about this healthy grains, a good replacement for rice and a sought after for people who can't take gluten and for the vegetarian too as quinoa is a source of protein.


Quinoa Tabouleh

Ingredients:
1 cup quinoa
1 tsp salt
1/2 cup fresh mint
1/2 onion
1 large ripe tomato
1/2 cup cucumber
4 tbsp extra virgin oil
1/2 lemon juice or more

Rinse the quinoa using a strainer or sieve. Place in a pot with salt and 2 cup of water. Bring to boil, then lower the heat and cover, cook slowly for 15 mins or all liquid has been absorbed.

Now turn off the heat and stir the quinoa. Let it sit for about 10 mins or until it cool down a bit. Once cool, fluff up with a fork, cooked quinoa should be fluffy and the curl like germ will separately slightly from the seed.

While it cooling down, chop the mint, dice the cucumber, tomato and onion. Add these to the cool quinoa with lemon juice and olive oil. Stir well to combine everything and serve at the room temperature.

  1. my husband and I were thinking to go for 1 vege day a week. Although I am not really a meat fan, neither fan of veges too. tegoq ayaq milo aja la kot

  2. Kitorang ni baru aje start, since balik christmas hari tu kitorang punya weight melantun naik..kekekee. Tapi my hb boleh makan vege soup tetiap hari, i pulak yang tak leh, tekak melayu tu nak cari nasi dengan sambal aje (macam mana nak diet ni ;p) I, milo pulak tak boleh terima tekak

  3. pst.. saya bukan melayu pun kalau tak jumpa nasi dlm seminggu tu.. .say bolej jadi 'tak betul". Nasi = ulam timun dgn kicap pun boleh hidup...

    I nasi letak kicap dengan telur goreng pun boleh, tak payah nak lauk yang meriah semua tu. Rasanya semua orang asian tak dapat nasi seminggu sure ketar lutut..hehehe

  5. i can live without nasi for a wk. as long as ada mee, bihun dan sejenis waktu dengannya. tp nasi panas dgn telur goreng dgn kicap, mmg nikmat la kalau dapat makan masa tgh lapaq. heaven

  6. Same to me le, even takde nasi tapi nak kena ada makan style malaysia, mee mggi pun jadi le, tapi nak kena ada pedas, tak pedas tak kick

  7. Betul tu Shinky, jauh mana kita pergi, tekak melayu tu tak boleh tinggal..tadi i masak nasi & goreng telur mata kerbau letak kicap..sedapnyaaaaa..adoi, diet ku buang ke tingkap..kekekeke
