Baked Teriyaki Chicken

Kids been sick since the past few days, took Louisa to do some test, blood, echography, x-ray and still can't figure out why she always have this stomach ache and nausea. The doctor send her to do another test, that would be a last round for her. The doctor ruled out appendix, it was a huge relief for us all. She woke up this morning with 39°C and down to 38.5°C after a shower... Wherelse Rayan, he's on the mend now. After almost 4 days fever, he look slightly better, and he start to eat some yogurt...

When kids sick, mom on the moves..I'm really tired but I still managed to find some time to do some simple cooking as I still need to feed them.

Ok, I'm in the mood for cooking something asian lately. Maybe I've been influenced by this Chinese New Year festive, whatever reason it is, nobody (read hubby and I) complained and we enjoyed every bit of it though Rayan still refuse to eat something solid and Louisa stick to her rice porridge..

Hubby call me from office yesterday and told me that he might be travelling to Hiroshima next month, hopefully he won't miss Louisa's birthday. Seems that he will travelling a lot this coming few months to prepare for our next big step..did I tell you we might be moving to South Korea? Yeahhh..Kimchi Land!!!

For dinner yesterday I baked some chicken drumstick with teriyaki sauce, inspired by his travelling news of course, we ate it with the rest of the Kimchi Fried Rice.

Teriyaki Chicken

Ingredients:
1 kg chicken drumsticks
2 garlic cloves
1 cm ginger
1 tbsp sesame oil
1tsp honey
1 tbsp light soy sauce
1 tsp thick soy sauce
Salt and pepper to taste
Toasted sesame seeds (optional)

Directions:
Pound garlic and ginger.

In a big bowl, add all the ingredients and marinate it at least an hour.

Pre-heat oven at 180°C.

Placed chicken in a baking dish. Brush the chicken with the rest of the marinate sauce and bake it for about 15 minutes. Turn over and bake again for another 20 minutes.

Once ready, sprinkle with some toasted sesame seeds, serve hot!
