Perfect Chocolate Chip Cookies

When I wrote Perfect, I really mean it. Chewy on the inside and crispy on the outside.


Chocolate Chip Cookies
 
Ingredients:
3/4 cup unsalted butter, softened to room temperature
3/4 cup dark brown sugar
1/4 cup sugar
1 large egg, at room temperature
2 tsp vanilla extract ( i don't use it)
2 cups flour
2 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
1 1/4 cup semi sweet chocolate chips
 
Direction:
Line an ungreased baking sheet with parchment paper. Set aside.
 
In a large bowl, creal butter and sugar (brown and normal) together until fluffy and light in color. Mix in egg and vanilla. Scrape down the sides as needed.
 
On low speed, mix in flour, cornstarch, baking soda and salt. Stir in chocolate chips. Dough will be thick and sticky. Chill the dough for at least 30 minutes.
 
Preheat oven at 180°C (350°F).
 
Drop 1 tbsp of dough onto cookie sheet. Bake for 8-9 minutes (10 minutes maximum) until barely golden brown around the edges.
 
Remove and let cool for few minutes on the cookie sheet. Transfer to cooling rack.
 
*Do not drop dough onto warm wookie sheet. Allow cookie sheets to cool completely between batches.
