Biscotti as a Gift

It's time of the year where most of people starting to get busy, either baking or shopping gifts for their love ones.

For us, rather than buying, I prefer to bake something, a simple way to show our appreciation to the person that going to receive it. 

So this is my first baking gift and few more will come in few days time..

I used the recipe from Martha Stewart and instead of using raisins, I used cranberry..to make it more like Christmast colours - green and red..

Pistachio and Cranberry Biscotti


Ingredients for the Biscotti:
2 1/4 cup of all purpose flour, more for work surface
3/4 cup of sugar
3/4 cup of raw pistachio
3/4 cup of cranberry
1 1/4 tsp of baking powder
1/4 tsp of salt
3 large eggs
1 tsp vanilla extract

Preheat oven at 350°F.

In a mixing bowl, add all the ingredients except eggs and vanilla extract.

In a small bowl, whisk eggs and vanilla extract, add to the flour mixture and mix until combined. Use hand (Martha did say about this) if needed to knead the dough. Divide the dough in half.

On a lightly floured work surface, roll each dough half into a 12-inch logs, transfer the logs to a baking sheet, gently press to a 7-8 inch thickness. Bake until risen and firm; about 15-20 minutes. Cool completely on baking sheet.

Reduce the oven to 300°F, on cutting board, use serrated knife to slice the logs into 1/2 inch thick slices. Lay slices in a single layer on baking sheet, bake again until the slices dry and starting to brown, about 15-20 minutes. Transfer to wire rack to cool off completely.
