Not the usual Ayam Masak Lemak Cili Api
Ayam Masak Lemak Cili Api or Chicken in Spicy Creamy Sauce is one of the staple food you can find in malay house specially in Negeri Sembilan. Cooked in creamy coconut milk with loads of bird's eye chilies, so sure make you want to run to the nearest water fountain.
In my kitchen, I try not to cook my food in coconut milk that often, having few family members on both sides passed away due to high blood pressure, cholestrol, diabetes & heart problem, I try to avoid it as much as I can. I'm not a health freak, no, not at all but I'm trying to.
So for this recipe, I omit the coconut milk and add skimmed instead, and it should be call SkinnyLatte Chicken in Spicy Creamy Sauce. It still got the same taste, thanks to the fresh herbs that I used and it fairly simple to prepare too. If coconut milk is not a problem for you, do use it for the very creamy and rich taste.
Ingredients:
500 g chicken thigh, cut to pieces
1 fresh tumeric leave (optional)
500 - 600 ml skimmed milk / low fat milk / coconut milk
2-3 dried tamarind slices
Salt to taste
Spice Blend
2 stick of lemongrass, white part only
2-3 cm ginger
4-5 shallots
2-3 garlic cloves
1 cm fresh tumeric or 2 tsp tumeric powder
Handful of bird's eye chilies, add more or less if you wish

Ayam Masak Lemak Cili Api - Chicken In Spicy Creamy Sauce
Ingredients:
500 g chicken thigh, cut to pieces
1 fresh tumeric leave (optional)
500 - 600 ml skimmed milk / low fat milk / coconut milk
2-3 dried tamarind slices
Salt to taste
Spice Blend
2 stick of lemongrass, white part only
2-3 cm ginger
4-5 shallots
2-3 garlic cloves
1 cm fresh tumeric or 2 tsp tumeric powder
Handful of bird's eye chilies, add more or less if you wish
Blend all the spice blend until fine paste.
In a pot, add chicken, milk, the spice blend, fresh tumeric leave and dried tamarind slices. Simmer over a medium heat, stir often so that the milk wont curdle. Salt to taste. Cook until the gravy thickens.
Serve hot with steam rice.
