Quarte-Quarts

Four quarters? What is that? This is of course refering to a britanny style pound cake, traditionally made with four ingredients : flour, butter, eggs and sugar.

It was meant to be posted late last year, but I don't know why I never did it..


Quatre-quarts Cake

Ingredients:
3 eggs
250 butter
250 g flour
250 g sugar
A pinch of salt

Preheat oven 170°C. Prepare the cake/loaf pan and set aside.

Separate eggs, beat the whites until stiff and glossy. In a separate bowl, cream together yolks, sugar and butter. Stir in flour, then carefoully fold the egg whites into the batter. Spoon the batter into the prepared pan and bake for 45-50 minutes.

Cool the cake in the pan for about 10 minutes, then transfer cake to a wire rack for complete cooling
